Fried Chicken With Pepper Salt |

- INGREDIENTS:
- 1/2 chicken(about 500g); 1 shallot(finely chopped); 1 tbsp chopped spring onion; some diced red chilli;
1 1/2 tsp pepper salt.
- SEASONING:
- 1/2 tbsp ginger juice; 1/2 tbsp Shaoxing wine; 1/2 tsp pepper salt; a pinch of ground ginger(or pepper).
METHOD:
- Wash and wipe dry chicken. Chop into chunks. Blend in seasonings and leave for a while.
- Drain the chicken and dust whith some cornflour. Deep-fry until golden, crisp and done. Drain and soak up
the excessive oil.
- Heat 1 tbsp oil, saute chopped shallot, put in chicken and sprinkle with wine. Add spring onion, red chili
dices and a little pepper salt. Stir vigoruously and dish up. Serve.
