Hot Beancurd Stew |

- INGREDIENTS:
- 2 pieces beancurb; 160g fat-and-lean pork; some diced red chilli and diced spring onion; 1 tsp
hashed garlic; 1-1/2 tsp chilli bean paste.
- SEASONING:
- 1 1/2 light soya sauce; 1 tsp dark soya sauce; 1/2 tsp sugar; 3/4 cup of water; a pinch of pepper;
a dash of sesame oil.
METHOD:
- Mince pork and blend in 1 1/2 tsp light soya sauce and a little cornflour.
- Heat 2 tbsp oil to saute hashed garlic, put in minced pork and fry till done. Fry chilli bean paste
throughly.
- Pour seasoning mixture into meat sauce and pour out half portion for later use.
- Rinse beancurb and cut into small pieces, put them into meat sauce and braise till beancurb attains
flavour. Dish up.
- Reheat remaining portion of sauce and sprinkle diced spring onion and red chilli, thicken sauce with
cornflour solution; pour over ingredients and serve hot.
