Sauteed Hot Prawns

INGREDIENTS:
450g prawns; 1 red chilli(finely chopped); 2 dried chillies; 1 tsp chopped galic; 1 tbsp chopped spring onion; 1 beaten egg; 1/2 tsp hot bean paste

MARINADE:
1/4 tsp salt; a pinch of pepper.

SEASONINGS:
1 tbsp spice vinegar; 1 tsp light soya sauce; 2 tsp sugar; 1 tsp ketchup; a dash of sesame oil.

METHOD:

  1. Shell and devein prawns. Rinse well. Slit the back of the prawns, open up and press lightly to flatten. Blend in marinade.
  2. Mix prawns with 1/2 beaten egg and 2 tbsp cornflour. Deep-fry in hot oil until done, drain and soak up the excessive oil.
  3. Heat 2 1/2 tbsp oil, put in dried chilli and fry throughly. Take out the dried chilli and then saute chopped garlic, hot bean paste and red chilli dices. Put in seasonings and stir well.
  4. Add the ready prawns into the sauce and stir vigorously over high heat. Dish up and garnish with spring onion. Serve.
