Sauteed Shrimps With Pea Pods

INGREDIENTS:
240g prawns; 1 pack of pea pods(150g); 1/2 tsp chopped garlic; 1/4 tsp chopped shallot; 1 egg white.

MARINADE:
1/2 tsp salt; 1 tsp cornflour; 1/2 egg white; a pinch of pepper.

SEASONINGS:
1/4 cup water; 1/2 tsp light soya sauce; 1/8 tsp salt; 1/2 tsp sugar; a dash of sesame oil; a pinch of pepper.

METHOD:

  1. Remove intestines from shrimps, rinse throughly and wipe them dry. Blend in marinade and leave for a while, then saute briefly to half done. Remove and drain excess oil
  2. Rinse pea pods and blanch till done, then drain for later use.
  3. Heat 2 tbsp oil to saute garlic and shallot, put in pea pods and saute briefly. Splash wine and pour in seasoning mix. Cook till ingredients are tender and sauce thickens. Finally, put in shrimps and stir fry till done. Dish up and serve hot.
