Rib With Pepper |

- INGREDIENTS:
- 480g brisket ribs; 2 tsp chopped shallot; 2 tsp chopped garlic; 1/2 tbsp chopped spring onion;
1 tsp paprike power; 1 tsp pepper; 1/2 tsp ground pepper
- Marinade:
- 1-1/2 tbsp light soya sauce; 1/2 tsp sugar; 1/2 tsp pepper; 1/2 tsp paprika powder; 1/2 tbsp wine.
- SEASONING:
- 1 tbsp black sweet soya sauce; 2 tbsp fish sauce; 1/2 piece raw sugar; a pinch of salt.
METHOD:
- Rinse, wipe dry and chop ribs into 2" long sections. Blend in marinade and leave for an hour. Deep-fry
briefly and drain.
- Saute shallot and garlic. Put in pepper, paprike power, and in fried ribs. Splash wine.
- Transfer above ingredients into an earthen pot. Put in seasonings, ground pepper and water to cover the
ribs. Bring it to a boil and turn to mild heat. Simmer until tendered and the sauce is thickened and sticky.
Sprinkle with some chopped spring onion. Dish up and serve.
