Rib With Pepper

INGREDIENTS:
480g brisket ribs; 2 tsp chopped shallot; 2 tsp chopped garlic; 1/2 tbsp chopped spring onion; 1 tsp paprike power; 1 tsp pepper; 1/2 tsp ground pepper

Marinade:
1-1/2 tbsp light soya sauce; 1/2 tsp sugar; 1/2 tsp pepper; 1/2 tsp paprika powder; 1/2 tbsp wine.
SEASONING:
1 tbsp black sweet soya sauce; 2 tbsp fish sauce; 1/2 piece raw sugar; a pinch of salt.

METHOD:

  1. Rinse, wipe dry and chop ribs into 2" long sections. Blend in marinade and leave for an hour. Deep-fry briefly and drain.
  2. Saute shallot and garlic. Put in pepper, paprike power, and in fried ribs. Splash wine.
  3. Transfer above ingredients into an earthen pot. Put in seasonings, ground pepper and water to cover the ribs. Bring it to a boil and turn to mild heat. Simmer until tendered and the sauce is thickened and sticky. Sprinkle with some chopped spring onion. Dish up and serve.
