Pork Fillet With Prune Stuffing |

- INGREDIENTS:
- 1 pork fillet(2 to 1-1/2 lbs); 1 pack of prunes(with seed removed); a braid of garlic(mashed);
1 tsp hashed shallot; 2 stalks of spring onion(sectioned and pressed); a piece of string.
- SEASONING:
- 1 tsp salt; a pinch of pepper; 1 tbsp white wine.
- Sauce:
- 6 oz clear stock; 1 1/2 tbsp light soya sauce; 1 tsp sugar; 1/8 tsp salt; a pinch of pepper.
METHOD:
- Wash and dry pork fillet. Slit fillet from the middle without open. Stuff prunes into fillet
and tie it tight with a string. MIx with seasoning and marinate for 30 minutes.
- Heat 3-4 tbsp oil and fry fillet till golden yellow. Removed and drain off excess oil.
- Saute mashed garlic, shallot and spring onion. Pour in sauce and a few prunes, put to boil.
Then put in fillet and stew with medium heat for 15 minutes till done. Remove, slice fillets and
dish up. Add cornflour solution to remaining sauce. Pour over fillet and serve.
