Sauteed Prawns With Beancurb Leaves |

- INGREDIENTS:
- 300g prawns; 5 sheets of beancurb leaves; 1/2 tsp sodium bicarbonate; 2 slices of ginger; a stalk of
spring onion(sentioned)
- SEASONINGS:
- 1/2 cup water; 2 tbsp light soya sauce; 3/4 tbsp sugar; 1/4 tsp salt; a dash of sesame oil.
METHOD:
- Trim prawns and remove intestines. Rinse throughly and wipe dry. Saute briefly and drain for later use.
- Cut beancurb leaves into thick strips immerse in sodium bicarbonate solution and soak till strips are tender.
Remove and rinse throughly with water. Drain for later use.
- Heat 2 tbsp oil to saute ginger and spring onion, pour in seasoning mix and beancurb leaves. Bring till flavour
becomes rich. When sauce turns thick, put in prawns and stir for a while till done. Dish up and serve.
