Stewed Ribs In Hangzhou Style

INGREDIENTS:
450g. prime ribs; a few slice of ginger; some sectioned spring onion.

SEASONING:
2 1/2 tbsp Shaoxing rice wine; 2 tbsp dark soya sauce; 1 tbsp light soya sauce; 1/4 tsp salt; 2 tbsp crushed rock sugar

METHOD:

  1. Cut prime ribs into 3" lengths, rinse well, scald then drain for later use.
  2. Saute ginger slice and spring onion sections with a little oil, remove and transfer into a deep bowl.
  3. Arrange prime ribs over ginder slice and spring onion sections
  4. Stir seasoning into above ingredients, mix well, then cover bowl with a plate, steam for 1 hour till prime ribs tender. Serve.
