Stewed Prime Ribs Hot Pot In Zheng Jiang Style

INGREDIENTS:
640g prime ribs; some ginger slices; 1 tsp ketchup; a little parsley.

Marinade:
1/2 tbsp light soya sauce; 1/2 tbsp Shaoxing rice wine.
SEASONING:
5 tbsp Zhenjiang vinegar; 2 1/2 tbsp sugar; 1 tsp light soya sauce; 1/2 cup water; 1 tsp ketchup.

METHOD:

  1. Rinse and wipe dry prime ribs, then cut into dominoes. Stir in marinade and leave for 15 minutes, then deep fry in plenty of hot oil till golden. Remove and soak up excess oil.
  2. Heat earthen pot and add in 2 tbsp oil to saute ginger slices, sprinkle wine and pour in seasoning. Bring ingredients to boil, then add in prime ribs and lower heat to stew till ingredients tender and sauce thicken. Finally, stir in ketchup, sprinkle parsley and serve in pot.
