Steamed Egg White With Assorted Vegetables

INGREDIENTS:
6 egg whites; 1/2 cup diced vegetables(assorted); 1/4 cup milk/evaporated milk; 1 cup superior stock; 1/8 tsp minced garlic.

EGG WHITE SEASONINGS:
3/4 tsp salt; 1/2 tsp cornflour; a dash of oil

SEASONINGS:
1/2 cup superior stock; 1/2 tsp light soya sauce; 1/3 tsp salt; 1/2 tsp sugar; a dash of sesame oil;

CORNFLOUR MIX:
1 tsp cornflour; 2 tbsp water.

METHOD:

  1. Scald assorted vegetable dice, drain for later use.
  2. Beat egg whites and blend in seasonings, milk and 1/2 cup superior stock. Strain mixture and transfer it to a tureen. Cover ingredients and steam till egg whites are done. Keep it warm.
  3. Heat 1 tbsp oil saute garlic, splash wine and pour in seasonings. Add diced vegetables and cook for a while. Thicken sauce with thin cornflour mix. Pour vegetables over steamed egg white to serve.
