Fried Prawns With Dragon Well Tea |

- INGREDIENTS:
- 640g reiver prawns; 1 tbsp dragon well tea leaves; 1 egg white; 2 slices ginder.
- SEASONINGS:
- 1/2 tsp salt; 1/4 tsp sugar.
METHOD:
- Rinse prawns. Shell. Stir in a little flour and egg white. Deep fry briely. Remove. Drain dry oil.
- Put tea leaves in a cup. Pour in 1/2 cup boiling water. Pour tea out when tea leaves spread;
Keep tea for later use. Pour in water again. Drain dry leaves.
- Heat 1 sbsp oil to saute ginger slices (throw away ginger slices). Put in prawns. Sprinkle with a little wine.
Pour in seasonings, tea leaves and tea. Stir well. Dish up and serve
