Fried Egg In thai Style

INGREDIENTS:
3 eggs; some red chilli rings; 1/2 tsp garlic(hashed); 1/2 tsp shallot(hashed); 1/2 tbsp spring onion(diced).

SEASONINGS:
2 tbsp white rice vinegar; 2 tbsp water; 1/2 tbsp fish sauce; 1 tbsp sugar; a pinch of pepper.

METHOD:

  1. Fry three eggs in pouch style with a little oil.
  2. Heat 1 tbsp oil to saute hashed garlic and shallot, sprinkle wine and pour in seasoning mixture. Bring ingredients to boil and put in pouch eggs, then turn to low heat and cook till eggs are done. Add in diced spring onion and red chilli rings, mix well and dish up. Serve hot.
